Le Lactaire Délicieux


I bought these at Sarlat market this morning.  Lactarius deliciosus, the Saffron Milkcap which sounds infinitely better in French as Lactaire Délicieux. And delicious they are too.


Dinner tonight - roast chicken with a mushroom pilaf and the most chickeny, buttery gravy possible.

  2. Hi Anna, the shaving brush is for cleaning the rogue bits of grit and so on, it seems the best tool for the job.

    Masses of tarragon in the chicken gravy, or should that be jus!

  6. They are delicious, indeed! Lucky you! I like them simply roasted on a frying pan. Recipe is simple. Cut the whole tops so they are flat, spread some salt and pepper 9not much, just a bit0, dip each top in the egg, wrap in some flour (or breadcrumbs) and just fry, like you do with piece of meat. Yummy!

  8. I love mushrooms as part of an autumn meal. I made a mushroom risotto the other night. Perfect for this time of year.

  9. Not familiar with that mushroom, but I'm sure it made a divine risotto! I brought back tiny jars of preserved Perigord truffes (the best I could do, but I was desperate for the flavor). We're already missing France! Next year, we may try to spend the entire month of September in France -- getting out of Paris for a change.

    1. I's not long 'til truffle season. I always reckon good truffle oil is another great way to add a truffly 'hit' to many things.

  11. a shaving brush??? but thats such a good idea, ill try that with mushrooms that grow in north europ next autumn, when there will be a national mushroom hunt season :) thanks for idea!
